What is it?

BHB combines three elements: fried wheat-flour fritters, stewed beans and a maize or rice porridge. The fritters are a yeast-raised dough with sugar, fried in oil; the beans cook slowly with garlic, onion, ginger and tomato, sometimes with shrimp or smoked fish.

Where does it come from?

No region of origin is established by the sources.

It is eaten across the whole country.

Main ingredients

  • Wheat flour, yeast, sugar
  • Beans, garlic, onion, ginger, tomato
  • Maize (or rice) for the porridge

What to eat it with

The three are eaten together, in the morning, with the hot porridge.

Origin and tradition

Sold in almost every neighbourhood, it shapes the mornings of millions of Cameroonians. It has stirred controversy over the quality of frying oils; a nutritionist interviewed by Allodocteurs notes that fritters and beans together provide a complete protein intake.
