The ruby-red hibiscus drink

What is it?

A deep-red drink made by steeping the dried calyces of hibiscus (Hibiscus sabdariffa, roselle). They are boiled and left to macerate at length, then strained and sweetened. The Cameroonian version is often lifted with pineapple, ginger or mint. The taste is tart and refreshing.

Origin and tradition

The calyces are harvested mainly in the country's far north, in the Sahelian climate. A popular, inexpensive drink sold by street vendors at markets and along the roads, it is drunk all year round and all the more in the heat.
